Roast vegetable casserole
Whilst I am cooking a casserole in the oven I often roast some vegetables to go with it.This is for 2 and contains, chopped leeks, halved new potatoes, sliced onion and chunks of parsnips. You could also add carrot chunks, squash chunks, pumpkin chunks, zucchini chunks,egg plant /aubergine chunks, turnip chunks, sweet potato chunks and sweet red ,green or yellow peppers in chunks.
Drizzle with olive oil. Add salt and pepper. Add chopped chilli for a spicy roast. Add some dried or fresh herbs.
They should take about 1 hour in the oven with a casserole. Longer depending on the size of your chunks.
